I drive a 3 wheel truck and I have been told that 4 wheel trucks are more stable. Is this true?

No. because of the way trucks are tested for stability, 3 wheel trucks are just as stable as 4 wheelers. So long as you obey the rules taught in training they are perfectly stable.

A three point arrangement is the most stable form from an engineering point of view. Consider making a table that would not "rock" under any circumstances or consider a plane landing on three groups of wheels.
